Your excellent chef very kindly offered to help in any way he could while the meat was cooking. As we hadn't expected such a kind offer we had nothing we could readily ask him to do - if we had realised there would be an opportunity to do that we could have identified ways in which he could help. We will know next time...he was brilliant by the way!
