At Nyama Catering we pride ourselves not only on the Quality of our food but our South African heritage forces us to also focus on Quantity! So there's bound to be some leftover Hog. Having had a Pig overdose ourselves, after more than a decade of Roasting Hogs, we would really love for our customers to have it all and would sure hate for it to go to waste.
Below please find a few of our ideas as to what to do with all those beautifully slow roasted pork bits:
Just have it as is! Yes! Dress it with a bit of salt, pepper, olive oil & vinegar and stick it in a crusty roll with some Nyama Sweet Mustard Sauce, lettuce & tomato.
Leftover Hog Roast Lasagne! Finely Chop up your leftover Hog Roast and make your own Tomato Ragu (chopped pork, onion, carrot, celery & garlic + peeled tomato's + red wine vinegar + tomato paste + hint of sugar, salt & pepper). Layer your ragu with Lasagne sheets, white sauce and top with cheese. Delish!
Pork Sheperds Pie. Again finely chop or mince your leftover Hog Roast. Fry with some chopped onion & garlic add ground cumin, tomato sauce and chilli powder. Add some chicken stock and corn flour. Cook till its a nice thick saucy mix. Stick in baking dish. Add mashed potato with grated cheese on top.
Simply add as a Pizza topping!
Leftover Pork Special Egg Fried Rice: Boil up some rice. Quick Fry Chinese 5 Spice, Brown Sugar & seasoning. Add beat-up-eggs then soya sauce. Add Diced Pork, boiled Rice and selection of fried Veggies (mushrooms, onion, peppers, peas etc.)
Leftover Pork Pancakes with Hoisin Sauce. Who needs duck if you have leftover Hog Roast! Fry pork in sesame oil with soy sauce, chinese five spice, ginger, spring onions & chopped garlic. Serve in chinese style pancakes with sliced cucumber topped with Hoisin Sauce.
Spicy Pork Goulash: Toss the Leftover Hog Roast in flour, paprika, salt and some freshly ground black pepper. Fry in hot olive oil untill slightly brown. Remove. Reduce heat and soften onions & garlic add red and green peppers, chilli, crushed caraway seeds and oregano. Cook for a minute before adding canned plum tomatoes, red wine vinegar and beef stock. Return the pork and slow cook for 1 1/2 hours. Serve with Yoghurt or Soured Cream topped with Paprika and fresh parsley on the side.
The most popular option however: a Pork and Apple Pie. Sautee sliced onion in butter / oil, add apple (cored & cut into chunks) and sage. Cook for 8 minutes. Remove. Add diced leftover pork to the pan. Brown slightly. Add flour and Cider stirring all the while. Return apple/onion mix and also add some wholegrain mustard. Simmer for half an hour. Remove and add to baking dish. Top with shortcrust / puff pastry and bake untill brown.
